Amaranth, locally known as Lal Shak (red variety) or Notey Shak (green/other varieties), is a staple leafy vegetable in Bangladesh, highly valued for its nutrition, rapid growth, and, vibrant color. 

Rich in iron, vitamins A and C, and antioxidants, it is a key component of traditional Bangladeshi, often sautéed with garlic, onions, and shrimp. It is one of the most widely consumed leafy vegetables in Bangladesh due to its delicious flavor and nutritional value.

Amaranthus tricolor is the most common variety, featuring red, purple, and green leaves. As a fast-growing, heat-tolerant crop that can be harvested within 25–35 days, making it excellent for home gardening in pots or raised beds.
