Mexico has a long history in the production, consumption and research based on amaranto (amaranth), including being the home of some of the founding members of the Amaranth Institute.

Native to Mexico, it has been an important part of the country’s culture and diet for thousands of years. The Aztecs considered amaranth sacred and used it in religious rituals, statues of their gods were made from amaranth and honey. In addition to being eaten, amaranth was also used as currency in pre-Hispanic times.

At our 2022 Conference, Dr. Jose Huerta and Dr. Ana Paulina Barba de la Rosa presented a full paper on Proteomics-transcriptomics of Abiotic Stress Responses in Amaranth.
