The Amaranth Institute is a nonprofit organization that acts to facilitate information sharing among those who have an interest in the cultivation and consumption of the grain amaranth. The institute, founded in the 1970s in order to promote discussions about promotion and production, has evolved to exist today as forum for information exchange among individuals and organizations with interest in different aspects of amaranth production and consumption.
